The Indian restaurant Moti Mahal, first established by Mokha Singh Lamba, in Peshawar had to be closed due to the Partition of India.

Mokha Singh and workers Kundan Lal Gujral, Kundan Lal Jaggi, and Thakur Dass moved to the city of Delhi, where Mokha Singh, due to his deteriorating health, sold the restaurant to the latter three where they started serving customers the flavors of Peshawar.

They specialized in tandoori dishes, and you’d be shocked to know that Tandoori chicken has its origins in this restaurant as well. But soon, they faced the problem of the tandoori chicken drying out as it was left hanging above the tandoors.

Seeing this waste of food, Kundan Lal Jaggi came up with a simple idea of making a curry to rehydrate the dry pieces of chicken. This gravy has very simple components: tomato puree, cream, butter, and a few Indian masalas.

This accidental dish, which then was known as Murgh Makhani, soon became a craze, and people started going wild about the marvelous flavors.

This dish made Moti Mahal one of the most popular Indian restaurants; hosted some of the most famous names, such as Soviet leader Nikita Khrushchev, American president Richard Nixon, Jackie Kennedy, and JFK the Queen of England are said to have dined here.
