How Butter Chicken Came To Life?

Kundan Lal Gujral was one of the migrants in the country after the Indo-Pak partition. He flew down to India in 1920. Earlier, he used to run a Dhaba in Peshawar. After partition, he came to India and started a restaurant named Moti Mahal in Daryaganj with two other members. 

At that time in the late 1950s, there were no refrigerators. So, the leftovers were not able to be stored for the next day. One fine day, Gujral didn't want to waste the leftover food materials. Thus, he experimented with chicken, added some tomatoes with butter, added masalas, and the gravy, and miraculously created what we know today as Butter Chicken.

How Butter Chicken Became India’s Most Loved International Cuisine?

Back in the day, there was a large number of people who wanted to taste traditional Peshawar cooking due to the region's rising Punjabi population. The trio of Kundan Lal Jaggi, Kundan Lal Gujral, and Thakur Dass started their Dhaba initially by selling bread and tea. But after installing three tandoor ovens, they added fish and chicken to their main menu. 

After the whole partition thing, all three entrepreneurs were very sincere about their business and semi-combined them all into one. The courageous entrepreneurs threw all their energy to make their projects work. 

They finally opened a shop in Daryaganj in 1947 and started their tea room. As their business began to grow, their fame and innovations followed suit.

Due to the lack of facilities at that time, they were faced with various issues regarding drying out of tandooris, storing and using the leftovers. Consequently, they were looking for a way to make the chicken moister, so that it can rehydrate the tandoori dishes. 

Then, one day, a customer came into their restaurant and ordered a simple chicken dish. Although there was only tandoori, the chef was instructed to prepare a sauce to accompany the dish. So, he initially made it with cream, butter, and tomatoes, along with a few seasonings. 

By this account, Butter Chicken was born, and slowly it became India’s most popular dish.

The restaurant became a local legend. Even former Indian Prime Minister Jawaharlal Nehru visited Moti Mahal as a customer to see what the rave was about. And former US President Richard Nixon even stopped for lunch there. Currently, Gujral's family owns the Moti Mahal brand and has food chains around the globe.
