Garam Masala Banana Muffins

INGREDIENTS

 Ingredients Quantity
ALCO Garam Masala 2 tsp
Salt 1/4 tsp
Baking soda (heaped) 1/4 tsp
Baking powder 1 tbsp.
Whole wheat flour 50 g
All-purpose flour 150 g
Honey 50 ml
Coconut sugar 100 g
Vanilla extract 1 tsp
Light olive oil 100 ml
Eggs 2 large
Yoghurt 80 ml 
Ripe bananas mashed 115 g


METHOD

  1. Preheat your oven to 180 C. Line a 12 hole muffin tray with liners.
  2. In a large bowl, mash the bananas into a fine puree with a fork. Add the oil, yoghurt, coconut sugar and honey, vanilla and eggs and mix until well combined.
  3. Now sift in your dry ingredients (flours, leaveners, salt and ALCO Garam Masala). Gently fold it into the wet batter, do not overmix.
  4. Scoop the batter into the muffin tin up to 3/4th of the way up. Bake for approximately 22 minutes or until a skewer inserted into the center of a muffin comes out clean.
  5. Let the muffins cool down in the pan for at least 15 minutes before removing from the pan and letting them cool completely.
