Alco employs Kashmiri Chilies from Kashmir, the northernmost region of India, to prepare Kashmiri Chili Powder. The chilies are grown in the Kashmir Valley, between the Himalayas and Pir Panjal Range, in the southern part of Kashmir. The southern part of Kashmir provides fertile soil for excellent chili-growing conditions. The Kashmiri Chili is in very high demand throughout all of India. Several have tried growing the Kashmiri Chilies in other areas of India but have been unable to replicate its hue and flavor. Kashmir is also home to other desirable spices, such as shahi jeera and saffron. Beyond spices, the Kashmir region also grows various fresh and dry fruits.

Alco sources Red Chili from Guntur, Andhra Pradesh, to prepare Red Chilli Powder and Red Hot Chili Powder. Andhra Pradesh produces the most chilies in India, and their most popular chili is the Guntur Sannam. The Guntur Sannam contains a large amount of capsaicin, which gives the chilies their dark red color and intense heat. The Guntur Sannam is a fan favorite in many Indian dishes.

How Are Chili Powders Processed?

Step 1: Dry Cleaning Machine

Step 2: Deseeding Machine

Separates the seeds and skin of the chili pepper

Step 3: Drying Machine

Removes the remaining moisture from the chilies

Step 4: Milling and Sifting Machine

A rotary hammer first breaks down the chili to create a coarse powder. The broken-down chilies will be filtered and ground continually until we get a fine powder.

Step 5: Packaging Machine

When the fine red chili powder is ready, it goes into a packaging machine that evenly disperses it into its packets and jars. The packaging is then sealed and ready to be sold.
