What can I use instead of cashews?
You can use almonds or melon seeds (Magaz seeds/magastari). You can add the almond flour or paste along with the water and simmer to make the gravy thick and more layered.
How to make Paneer taste fresh while preparing it beforehand?
Suppose you are making ahead of time for guests. Then do not add Paneer beforehand. At the time of serving, when you reheat, add Paneer. So Paneer stays soft.

You can substitute tomato with Yogurt in the same proportions. If adding tomatoes, add 2 to 3 tablespoons cream as it balances the acidity and tanginess of the tomatoes in your Shahi paneer masala.
