Chicken Tikka Masala Naan Hack

Chicken Tikka Masala Naan Hack

People are making all sorts of funky tacos these days. But this taco recipe will beat all the other tacos you ever had tried before.

Ingredients

 For Veggie Salsa: 

  • Tomatoes - 5 small
  • Red onion - 1 small
  • Cucumber - 1/3

For Mint Yogurt Dressing: 

  • Greek yogurt - 3/4 cup
  • Mint leaves - 6 fresh 
  • Zest + juice a lemon - 1/2
  • Garlic (peeled and minced) - 1/2 small
  • Salt - a pinch
  • Sugar - 1 tsp

To Serve: 

  • Naan bread - 4 regular or 8 mini 
  • Fresh cilantro, roughly torn - small bunch

 

Method

  • Firstly, place chicken in a bowl with all of the chicken tikka ingredients except for the vegetable oil. Then cover with plastic wrap and leave to marinate in the refrigerator for 2-3 hours (up to overnight).
  • Then preheat the broiler. Now remove the chicken from the refrigerator and place the pieces of chicken on a large baking tray — try to make sure they’re not stuck together. Then brush with the vegetable oil and place under the broiler for 5-6 mins until starting to char. Then turn the chicken over and cook for a further 3-4 mins until the chicken is lightly charred and cooked through in the middle (slice a piece in half; if it’s no longer pink, it’s done).
  • Then while the chicken is cooking, make the salsa by finely chopping the tomatoes, cucumber, and red onion. Then mix and place in a small bowl. Then next make the mint yogurt dressing. Now place the yogurt in a small bowl, and finely chop the mint leaves and add to the yogurt, along with the lemon zest, juice, salt, garlic, and sugar. Stir together.
  • Then it’s time to assemble the chicken tikka tacos. Spread a tbsp. of the yogurt dressing on the naan bread. Then divide the cooked chicken between the naan bread and top with the salsa, more yogurt dressing, and a few cilantro leaves. Serve immediately.
  • Then place chicken in a bowl with all of the chicken tikka ingredients except for the vegetable oil. Then cover with plastic wrap and leave to marinate in the refrigerator for 2-3 hours.   • Then turn the chicken over and cook for a further 3-4 mins until the chicken is lightly charred and cooked through in the middle While the chicken is cooking, make the salsa by finely chopping the tomatoes (discard the seeds), cucumber, and red onion. Mix and place in a small bowl. Next, make the mint yogurt dressing. Place the yogurt in a small bowl.
  • Finely chop the mint leaves and add to the yogurt, along with the lemon zest, juice, garlic, salt, and sugar. Stir together.
  • Now it’s time to assemble the chicken tikka tacos. Spread a tablespoon of the yogurt dressing on the naan bread. Divide the cooked chicken between the naan bread and top with the salsa, more yogurt dressing, and a few cilantro leaves.
  • Serve immediately.
