Step By Step Instruction

  • Crack open your coconut-Place the coconut on a hard surface and slam with a hammer until it cracks open. Pour out the water by hitting it against the side of its shell. Once done, peel off the brown outer layer with ease.
  • Gather the fresh coconut meat-Use a spoon or knife to start separating chunks of meat from the shell. After removing enough pieces, pull them all away at once.
  • Peel and shape the coconut meat-Use a vegetable peeler to remove the brown skin from the softer white part of the meat, then rinse off any excess residue or sediment present on it.
  • To shred Coconut-Grate the coconut meat using a grater. When making Shredded Coconut, always use the smallest hole on the grater; so it comes out straight enough. To make it coarser, use the larger side of a grater or even a lemon zester tool.
  • For Desiccated Coconut-You can prepare this by using the tiniest spice section of a grater, or you could chop up the coconut meat and process it until it has a finely ground texture. 
  • Finally, dry the coconut-You can do this either in an oven or a dehydrator. Alternatively, you may dry it at room temperature (best for warm, dry climates). 
  • Dry the coconut in the oven- keep it in a single layer on a baking sheet and dry it at 60 degrees/140 F for around an hour.
  • Dry the coconut in a dehydrator – Dry at 40 degrees Celsius (105 Fahrenheit) for about 4-6 hours. If you have a dehydrator, it's worth doing this because you are using less heat, and there is no risk of burning the pieces.

Storing Instructions

Transfer the dry coconut to an airtight glass container, which will stay fresh for around six months at room temperature. If you prefer long-lasting, you may also store it in the fridge or freezer - where it'll last up to a year (or even more).
