  • 1 Tbsp - Extra-virgin olive oil
  • 4 - Boneless skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 1 Tsp - Dried oregano
  • 3 Tbsp - Butter
  • 3 - Cloves garlic, minced
  • 1 ½ Cups - Cherry tomatoes, halved
  • 3 Cup - Baby spinach
  • ½ Cup - Heavy cream
  • ¼ Cup - Freshly grated Parmesan
  • Lemon wedges for serving


Step 1 - Heat oil in a skillet over medium heat. Add the chicken and season with oregano, salt, and pepper. Cook each side for 8 minutes or until golden and no longer pink. Take out from skillet and place aside.

Step 2 - Melt butter in the same skillet over medium heat. Add the garlic, stir, and cook for approximately a minute until fragrant. Add the cherry tomatoes and salt & pepper to taste. When tomatoes burst, add spinach and continue cooking until the spinach starts to wilt.

Step 3 - Add heavy cream and Parmesan and bring it to a simmer. Turn down the heat to low and simmer for three minutes or until the sauce has slightly reduced. Return the chicken to the skillet and heat it for 5 to 7 minutes.

Step 4 - Serve with lemon wedges. Enjoy!
