Make Irish Soda Bread

Irish soda bread is best served the same day it is made. If you have leftovers, it makes a nice toast in the morning. 

    Let's Make Irish Soda Bread.

    Prep Time: 10 minutes 

    Cook Time: 6 hours

    Ingredients 

    Ingredients Quantity
    Rice Flour Blend 2 cups
    Baking Soda 1 1/2 tsp
    Baking Powder 1 tsp
    Salt 3/4 tsp
    Xanthan Gum 1/2 tsp
    Raisins 1/2 cup
    Sugar 1/4 cup
    Butter, Softened 3 tbsp
    Egg 1
    Buttermilk 1 cup

    METHOD:

    1. Firstly, heat the oven to 450°F. Then grease cookie sheet with shortening or cooking spray.
    2. Then in a medium bowl, stir together flour blend, baking soda, baking powder, salt, and xanthan gum. Then stir in raisins; set aside.
    3. Now in a large bowl, beat sugar, butter, and egg with an electric mixer on medium speed for about 2 minutes or until light and fluffy. Then gradually stir in flour blend mixture alternately with buttermilk, beginning and ending with flour blend mixture.
    4. Then place on a surface lightly sprinkled with flour blend. Knead gently 4 or 5 times. Then place dough on a cookie sheet, pat into a circle about 1 1/2 inches thick. Then with a sharp knife, cut X across loaf about 1/2 inch deep.
    5. Then bake at 450°F 5 minutes, reduce heat to 350°F, and bake 25 minutes longer or until golden brown and bottoms sound hollow when tapped. Remove from pan to cooling rack.
    6. Now cool completely before slicing, about 4 hours. Then serve with butter and jam, if desired.
