  • 600 Gms - Rice
  • 200 Gms - Urad dal
  • 3 Cups - Water
  • 1 Tsp - Baking Soda
  • 1 Tsp - Salt

Instructions

  • Soak rice and urad dal in a large vessel overnight.
  • Blend to a smooth batter in a mixer jar.
  • Add baking soda and salt to the batter.
  • Leave for 6-8 hours to get fermented.
  • Take the batter to the mold and steam for 10-15 minutes.
  • Soft and fluffy idlis are ready to eat with sambar or rasam. 

Masala Dosa

For Batter,

  • ½ Cup - Urad dal
  • 2 Cup - Rice
  • 3 Tbsp - Chana dal
  • ½ Tsp - Methi seeds
  • 2 Cup - Water
  • ¾ Tsp - Salt

For Potato Stuffing,

  • 2 Cup - Boiled potatoes
  • 1 Tbsp - Cooking oil
  • ½ Tsp - Mustard seeds
  • ½ Tsp - Cumin seeds
  • 1 Tsp - Ginger
  • 1 Cup - Sliced onions
  • 1 Sprig - Curry leaves
  • 2 - Green chilies
  • ½ Tsp - Alco Turmeric Powder
  • To Taste - Salt
  • 2 Tbsp - Coriander leaves

Instructions

  • In a large bowl, take urad dal, rice, chana dal, and methi seeds.
  • Rinse the ingredients well, and add to a blender jar.
  • Add water and salt to make a smooth batter.
  • Keep the batter out and ferment for 4-6 hours.
  • Heat a pan; add cooking oil, mustard seeds, cumin seeds, and ginger.
  • Add sliced onions, curry leaves, and green chilies.
  • Add Alco turmeric powder, salt, and coriander leaves.
  • Add boiled potatoes and mix the masala well. 
  • Now, spread the dosa batter in a pan, and put the potato masala into the batter, and the delicious masala dosa is ready.

Medu Vada

Medu Vada

Medu vada recipe is a type of South Indian pakoda(fritters). It is soft inside and crisp outside. You can pair it with sambar, rasam, or any lentil you choose. South Indian breakfasts such as the Appam recipe, Pongal recipe, and Idli recipe are so famous that they are available worldwide.

Ingredients

  • 1 Cup - Urad dal
  • To Taste - Salt
  • 2 Cup - Water
  • Oil for deep frying

Instructions

  • Add urad dal in a large bowl, water, and soak for 5-6 hours.
  • After soaking, take the dal out and put it into the blender; add salt, blend well, and make a smooth batter.
  • Heat the pan or wok, and add cooking oil.
  • Check whether the oil is hot or not. If desirable, put the batter after making it flat with a hole in the center, or use a Vada maker.
  • Fry the vadas until crisp and golden.

Upma

Upma is one of the healthiest Indian breakfast recipes. It consists of semolina, onions, green chilies, capsicum, or whatever vegetables you want to add. You can make this recipe healthy by adding ghee instead of oil.

  • 2 Tbsp - Ghee/ Cooking oil
  • 1 ½ Cups - Semolina
  • 1 Tsp - Mustard seeds
  • 2 Tbsp - Chopped onions
  • 1 Tbsp - Chopped tomatoes
  • 3-4 - Green chilies
  • 1 Sprig - Curry leaves
  • 1 Tsp - Alco turmeric powder
  • 1 Tsp - Alco Red Hot Chili Powder
  • 2 Cup - Water
  • 1 Sprig - Coriander leaves

Instructions

  • Heat a pan, and add semolina to fry until brown.
  • Take the suji/semolina out of the pan, and add ghee/cooking oil.
  • Add mustard seeds, curry leaves, chopped onions, and tomatoes.
  • Add green chilies, Alco turmeric powder, and red chili powder.
  • Add fried suji to the pan to mix with other ingredients, and cook for some time.
  • Mix water to the pan, cook until a thicker consistency, and add coriander leaves.
  • A healthy and tasty upma is ready to serve.

Uttapam

UTTAPAM

Uttapam is also from South Indian breakfast dishes. It is prepared with the rice and lentils batter used in idli and masala dosa recipes. It is topped with onions, tomatoes, green chilies, capsicum, and carrots. You can also prepare the Batter of rice and lentils beforehand and use it to make various dishes afterward.

  • 1 ½ Cup - Rice 
  • ½ Cup - Urad dal
  • 1 Tsp - Salt
  • 2 Cups - Water
  • 1 - Medium onion (chopped)
  • ½ Cup - Chopped capsicum (optional)
  • ⅓ Cup - Chopped tomatoes
  • 2-3 - Green chilies (chopped0
  • Oil for shallow frying
  • To Taste - Salt

Instructions

  • Soak urad dal and rice in water for 5-6 hours.
  • Blend well after soaking, add salt, and make a batter of smooth consistency.
  • Heat a pan, add drops of oil, put the batter in the pan with the help of a spoon, and rotate gently.
  • Add onions, capsicum, tomatoes, and green chilies over the top.
  • Add oil on the edges and flip to the reverse side. 
  • Cook until golden brown and put it on the plate.
  • The delicious uttapam is ready to serve on the pates.
