Vada Pav is made in three phases. 

Phase 1 - Making of Vada

After boiling four potatoes, peel and mash them. In a pan, heat 1tsp oil. Add curry leaves, asafoetida, mustard seeds, cumin powder, and salt. After tempering, mix boiled potatoes. Turn off the flame. Let the mixture cool. Make small potato balls with the mixture and coat the balls with chickpeas batter to deep fry the balls. Voila! Your Vada is ready.

Phase 2 - Making Dry Peanut and Garlic Chutney

Roast the garlic for almost 3 minutes, add red chilies as per your taste, and saute them together until it gets crisp. Blend the garlic with red chili and add peanuts and coconut to enhance the flavor of the chutney. 

Phase 3 - Assembling Vada Pav

Moving forward to the recipe, you need to take a pav and slit it from one end, and keep the other end intact. Fill the space inside the pav bun with garlic and green chutney (if you have one); otherwise, Alco Vadapav Masala will add the magic to this Vada Pav Recipe.
