This amazingly delicious Creamy Shrimp Pasta is a quick, easy, and delicious dinner! Perfect for any weeknight dinner, this dish is better than your favorite Italian restaurant!
Ingredients
- 2 pounds - Shrimp (medium; peeled and deveined)
- 1 teaspoon - Kosher salt
- 1 teaspoon - Fresh black pepper (ground)
- 2 – 3 tablespoons - olive oil
- 6 cloves - Minced garlic
- 1 can - Tomatoes (crushed)
- 1-½ teaspoons - Dried basil
- ½ teaspoon - Red pepper flakes (crushed)
- 1 cup - White wine or chicken broth
- 1/3rd cup - Clam juice
- ¾ cup - Heavy whipping cream
- 1 pound - Penne pasta
- ¾ cup - Fresh grated Parmesan cheese (or more, if needed)
- Chopped fresh parsley (optional)
- Fresh basil to garnish (optional)
Cooking Instructions
- Season the peeled shrimp with pepper and salt.
- Heat some olive oil in a deep and large skillet on medium heat. Add in the shrimp with the garlic. Cook the mix for around 4 minutes till the shrimp turns pink and opaque. Remove your shrimp from the pan. Set it aside.
- Add the tomatoes, clam juice, red pepper flakes, basil, heavy cream, and wine without cleaning or draining the pan. Boil this mixture and then reduce the heat to medium-low to let it simmer for about 8 minutes till it thickens.
- While the sauce is simmering up, cook the penne pasta as per the directions on the package and drain.
- Now add the shrimp, 1/3rd cup Parmesan cheese, and cooked pasta into the sauce. Keep stirring to combine everything. Season the mix with more pepper and salt if needed.
- Garnish with fresh herbs and the remaining grated cheese, if desired.
